Linton is our home farm in the Eastern Cape — and this boerewors is named after it. Three meats — beef, pork, and lamb — produce a fat character and juiciness that a single-meat sausage simply cannot replicate. Customers consistently identify the lamb component without being told it’s there. We use only hard lamb fat — never soft belly fat — because it renders slowly during cooking, keeping the sausage juicy from first bite to last. It’s also why this wors doesn’t shrink on the braai.
